Brian Chiala, who runs the operation with his father, John Chiala, has told Los Gatos Patch his family has always loved the business, with his sister working there through high school and them purchasing it in the summer of 1991.
The business not only sells sandwiches, but sausages with recipes passed down to the Chialas from previous owners.
Besides rack smokers for the sausages, the business has a truck smoker that can hold approximately 800 pounds of salmon or 1,200 pounds of turkeys.
The smokehouse, located at 575 University Ave., also processes kills from local hunters and beef from cattle ranchers, and this makes up a big part of the business.
For instance, Brian said they do about 800 pigs, 500 deer and 50 elk per year, butchering the dead animals and cutting them down into usable portions for their customers.
